HI , I am doing the TA level 3 course , do I have to fill in a generic session sheet for every session I attend at school ?

No, but it would be a good idea to log each session in a diary or something, that way youll have a recird of all activities and you can use them for future units if relevant x

I use the session log sheet as a diary. I mark down the date, amount of hours ive done in school that day, and the activities Ive done.

That's good. at least you can look back at it and apply it to evidence for future questions.
You complete the session sheets when addressing or answering certain unit questions. You can use your log for the dates and activities and build the detail based on the session. You will aquire so many experiences through sessions that are relevant to the questions but without logging them with dates and basic detail you may forget.
If you were to complete the session record for each session that you participate in you'd be there for ages.
